 What Is Cream Brulee?

The classic cream burlee is a creamy mixture just like pudding or baked custard with a crispy and browned top of melted sugar that cracks when you gently tap it with a spoon. The cream burlee inside the mixture is made with heavy cream, eggs, sugar, and vanilla. The melted sugar crust will be slightly warm or room temperature when served, but the custard below should be cold.

What is special about creme brulee?

  • Custard interior: The custard inside is made with heavy cream, eggs, sugar, and vanilla. Whatever you serve it cold, or warm it's crazy delicious.
  • Crispy:The crispy texture on top which is made from burning the sugar with torch fire, gives creme brulee beautiful brown color and super crispy texture. You will hear the break sound of the sugar.
  • Vanilla flavor:The classic creme brulee is made with vanilla, but there are tons of different flavors that you can make creme brulee with, such as almond, lemon, and strawberry.

What Is Creme Brulee Made Of

  • Heavy Cream:  Boil about 1-quart heavy cream with vanilla for about 10 min. this will make the cream thicker. Same as custard.
  • Vanilla Beans: I recommend you to use a fresh vanilla bean, but if you don't have you can simply use vanilla extract 1 tablespoon is good. Some people use Almond Extract or lemon zest to change their taste.
  • Sugar: Vanilla sugar, you can make it at homePlace vanilla beans and sugar in containers for about 2 weeks to allow the sugar to absorb the vanilla flavor.
  • Eggs: For 6 servings, use 6 yolk eggs. Make sure to whisk well while you prepare the cream Brulee.
  • Hot Water: Pour about 3 cups or more of hot water (hot, not boiling) into the pan to come halfway up the sides of the ramekins.

  • 1-quart heavy cream
  • 1 vanilla bean, split and scraped
  • 1 cup vanilla sugar, divided
  • 6 large egg yolks
  • 2 quarts hot water

How To Make Alton Brown Creme Brulee

  1. Preheat the oven to 325 degrees F.
  2. In a saucepan and over medium-high heat add the heavy cream with 1 vanilla bean and bring to a boil, About 5 to 7 min.
  3. Once the cream is boiled, remove it from heat and allow it to sit for about 15 minutes.
  4. Remove the vanilla bean from the cream and reserve it for another use. I recommend you put it in a sugar container.
  5. In a large bowl, beat 6 large egg yolks and whisk with 1/2 cup of sugar.
  6. Keep whisking until well blended and it just starts to lighten in color.
  7. Smoothly add the cream a little at a time, stirring continually. Keep stirring until you complete all the cream.
  8. Place the ramekins into a large cake pan or roasting pan.
  9. Pour about 3 cups or more of hot water (hot, not boiling) into the pan to come halfway up the sides of the ramekins.
  10. Pour the Creme Brulee mixture into the ramekins, about 3/4 the ramekins.
  11. Bake the Creme Brulee until is set, but still trembling in the center, approximately 40 to 45 minutes.
  12. Remove the ramekins from the oven and place them in the fridge for at least 2 hours. They can last for up to 3 days in the fridge.
  13. Before serving, remove creme brulee from the refrigerator for at least 30 minutes before.
  14. Top with sugar about 2 teaspoons. until you make a thin layer. don't put too much sugar it will create a hard and thick layer after browning.
  15. Using a gas torch, melt the sugar and form a crispy top. Watch the video to learn how to do it correctly.
  16. Allow the creme brulee to sit for about 5 to 10 minutes before serving.
  17. Serve with vanilla ice cream and enjoy.

How To Store Alton Brown Creme Brulee
